Our partnership with the BIGH aquaponics farm allows us to offer dishes made from fresh, local, and seasonal ingredients, while respecting the environment.
BIGH aquaponic farm is an innovative project for sustainable, local food production located in Anderlecht. The farm has developed a cutting-edge aquaponic system where fish, fruits, vegetables, and herbs grow in a closed loop. Bacteria are used to convert waste into nutrients that plants can absorb. The purified water then returns to the aquarium. This method allows for the production of fresh food while reducing water and energy needs compared to traditional methods.

With the help of his wife Élise, Antoine took over the family farm and developed it with a sustainable and nature-friendly approach. He invested more in the well-being of his herd as well as in a virtuous system regarding the resources used.
It is on the farm that they produce the food consumed by the sheep and also ensure that the fields are made up of the plants necessary for the good health of their flocks.
Many other farmers are now following his example, and this is contributing enormously to changing attitudes within this agricultural sector.
Beyond ecological responsibility, his daily work also offers us high-quality, deliciously tender meat to feature on our menus.
Our partnership also allows him a balance in his herd management, as we are in constant contact to offer cuts on our menu that are sometimes overlooked by his other clients.
Thus, as well as promoting good examples to follow, we ensure a notable reduction in food waste while offering tasty dishes, sourced from our local region, which give meaning back to our consumption of meat.
